Raspberries

I love raspberries and if you follow me on Pinterest you will know I often pin foods involving raspberries. I pinned this ages ago and decided to whip it up this week.






I did make a couple of changes to the recipe.
- I didn't use a food processor so I just rubbed the butter through with my fingers.
- My tin was a bit smaller so my layers are thicker but it still tastes great and I love the biscuit base being a bit thicker.
- I didn't use a full tablespoon of lemon rind I just used the rind of 1 lemon. A tablespoon seemed like a lot and I only had one. It gave it a nice lemony flavor without being overpowering.

It's been great to grab in the mornings and eat on the way to work this week.
